- thin-sliced chicken breast
- salt
- pepper
- flour
- lemon juice (1 whole plastic lemon!)
- capers of choice
- chicken stock
- butter
- olive oil
Cut your chicken breast into thin slices (or purchase thin-sliced). Lay out evenly and sprinkle your salt and pepper on each side to your liking.
Coat each side in flour.
In a pan, heat up a good amount of olive oil and 2 tbsp of butter. Fry chicken for 3 minutes each side on med-high. Make sure to add another dose of butter and oil if you must do multiple batches.
Once completed, return all chicken back to the pan.
On medium heat, add chicken stock to the base of pan. Pour in entire lemon juice and entire bottle of capers. Cook covered for 5 minutes or until cooked through.
Plate your chicken in a deep dish and pour sauce mixture over. Serve with rice pilaf or another rice dish of choice.
